Bereiding
cut onion and garlic, fry in oil
add the spices: finely cut ginger, cumin, cinnamon, safraan and chilli flakes (equal amounts of
each, 1/2-3/4 teaspoon each, depending on preferences)
add the meat cut in cubes, stir and close with the tagine top
cut pastinacas and carrots, add to tagine
add chopped tomatoes and bell peper
add several small pieces of lemon
add salt, pepper,let it simmer on small fire for an hour or so, covered with tagine lid
20 mins before it's done, add cut potatoes and (optionally) chikpeas and chopped coriander
serve with couscous
